Corned Beef in the Crockpot

Have you ever tried corned beef and cabbage in the crockpot?
Probably the best you'll ever taste.
All I do is throw in the corned beef brisket, add a quartered head of cabbage, add some fennel,
maybe a half teaspoon or so, and about 1/2 cup of water.
The corned beef adds such a nice flavor to the cabbage.
Then you serve the cabbage with a little vinegar on it, plus butter, salt, and pepper.
Throw in a couple of quartered potatoes too.
They will pick up the flavor of the corned beef and cabbage.

Irish Baked Parsnips

Oh my gosh! Parsnips are sooooooooo good! Just cut up in long
strips,drizzled with a little butter and baked in the oven....mmmmmmmmmmm.

2 1/2 pounds parsnips
3 tablespoons stock (any flavor desired)
Salt and pepper to taste
Pinch nutmeg
1/4 cup butter or bacon fat

Peel parsnips, quarter, and remove any woody core.
Place in a saucepan, cover with water; bring to a boil and cook for 15 minutes.
Remove from heat and drain well. Place parboiled parsnips in an ovenproof dish.
Add stock and sprinkle with salt, pepper and nutmeg.
Dot with butter or bacon fat and bake, uncovered, for 30 minutes on a low shelf in a 350F (175C) oven.
Serves 6 to 8.

This is more Irish than Scots.
The Guinness Brewery is located on the River Liffey Locals sometimes refer to Guinness as Liffey water. Some of the averts for Guinness in past time spoke of the health benefits one that stick in my mind is 'There is a baby in every bottle'.

Beef With Stout.... The Only way to Cook Beef-sometimes add oysters!

Ingredients:
1/4 lb. Butter,
1 pound beef chuck cut into 1x2 inch pieces.
1 large sweet onion-sliced thin,
a bouquet garni:thyme,sage,parsley,bay leaf,
1/4 teaspoon salt.1/4 teaspoon black pepper,
1 cup beef stock,
1 pint Guinness stout,
4 medium potatoes(1 lb peeled)
2 tablespoons parsley,
large manly sweet carrots.

1.Heat butter in skillet brown the beef in batches-set beef aside.
2.cook onion in hot fat for 3 minutes-just softened,return meat to pan add bouquet garni,salt,pepper,stock and stout and bring the mixture to a boil.
Cook stew uncovered in preheated 350 degree oven for about one hour add potatoes and bake e for 45 minutes till all is tender.
Add salt and pepper to taste.
Thicken sauce with butter and flour.
Garnish with parsley.

I guess you all know the story of Paddy.
He spent night after night at the pub and would only leave whit it closed.
One day I asked him. "Paddy what does the Mrs. say when you stumble in drunk?
I creep in quietly and slip into bed trying to pretend that I have been there all night."

What you do is this.
You come home open the as loudly as possible slam it shut with vigour.
From the bottom of the stairs you start to sing at top voice 'I am in the mood for love'.
She be sound asleep by the time you reach the bedroom."
